Serves 10 Prep time: 20 mins Cooking time: 20 mins Ingredients 2kg: potatoes, peeled and cut into batons (like French fries) oil, for deep frying 100ml: olive oil 100g: garlic, chopped 100g: coriander, chopped 20g: cumin powder 100ml: sweet chilli sauce 20ml: sesame oil 100ml: sesame paste 100ml: pomegranate syrup 100g: peanuts 20g: salt Preparation 1. Season potatoes with salt and deep-fry until golden brown. Drain and set aside. 2. Heat olive oil in a saucepan. Add garlic and sauté until golden brown. Add chopped coriander and cumin powder. Mix well and then add sweet chilli sauce, followed by the fried potatoes. Sauté for 5 mins. Let cool and refrigerate. 3. When ready to serve, spoon the salad onto a platter, garnish with sesame oil, sesame paste, pomegranate syrup and peanuts. Serve immediately. From: Gulfnews
