Serves 2 Prep time: 20 mins Cooking time: 15 mins Ingredients 30ml oil 250g whole Boston lobster, cleaned, boiled and halved 1 large clove garlic, sliced 20g button mushrooms, quartered 100g udon noodles, cooked until al dente 1 tsp each, oyster, light soy and dark soy sauces 2 tbsp chicken stock Preparation 1. Heat 25ml oil in a deep frying pan and pan-fry lobster halves, flesh side down, until fragrant and cooked through. Remove and set aside. 2. In the same pan, heat the remaining oil and sauté garlic until golden brown. Add mushrooms and sauté again until just cooked. Add noodles, mix and then place the lobster halves over the noodles. Pour the sauces and chicken stock over the lobster. 3. Cover and simmer for 2 minutes, or until most of the moisture evaporates. 4. Place a portion of noodles on a plate and top with a lobster half.
